The Mint Restaurant is the concluding addition of what has been a four-year major works and refurbishment programme, costing nearly £10 million. Patrick Jones, general manager, of Tewkesbury Park, hosted the grand-opening of its brand-new destination restaurant, Mint, with a lavish party for corporate guests and friends of the hotel.
The completion of Mint brings the renovations to a conclusion. This follows last year’s extensive renovation, which resulted in the addition of the Cotswolds Suite; nine luxury historic suites; two spa rooms; two meeting rooms; an orangery and a cocktail lounge. The health club, guestrooms, main foyer and reception were all completely refurbished.
Reputed local interior designer, ADS Design, have cleverly drawn upon the restaurant’s name, Mint, to create a fresh and bright décor. Directed by head chef Anuj Thakur, who works particularly closely with the seasons, and takes advantage of the finest ingredients from local producers, Mint’s menus will change eight times a year, carrying through the mint theme and will feature the season’s relevant herb, from “Winter Mint” featuring mint and sage, to “Early Summer Mint” with mint and lavender.
Guests mingled and savoured delicious canapés prepared by executive chef, Anuj Thakur. Adhering to the restaurant’s theme, Anuj served a mini selection of dishes, using local ingredients, that will appear on the new menu. Dishes included: pork belly with honey and ginger glaze; braised shin of beef; Bibury trout & Coln Valley smoked salmon mousse, along with a selection of drinks including, Chase Gin, elderflower and fresh apple juice cocktail and a non-alcoholic green goddess with spinach, ginger and fresh apple, which was a nod to the restaurant’s fresh and balanced approach.
Tewkesbury Park has an 18-hole par 72 parkland golf course, academy course, practice range, putting green, golf boutique and squash and tennis courts. A fully-equipped leisure and fitness suite has an excellent gym, indoor swimming pool, outdoor hot tub, sauna and steam room. Tewkesbury Park is only five minutes from M5 junction nine, on the doorstep of Tewkesbury and within easy reach of Cheltenham, Gloucester and Worcester.
